Nose: Straight in with malty caramel, toffee, apples, apple strudel, pumpkin pie and maple/pecan plait. Slight cider note, a touch of spearmint and a floral quality.
Taste: stick with apples but its more of a brandy than a cider. Spirit led with the oak following as a dependable soft and salty support that provides a fine mouthfeel. Spearmint and herbal soapiness which after the initial soft opening becomes very fresh [fennel and cumin seeds] with a waxy/oily body. With water however, the soapiness is lifted somewhat to give way to a nutty, chocolate oakiness, which along with the superb mouthfeel offers a potentially fine malt experience indeed.
Finish: the fresh continues along. With water its a robust but gentle oaky. Bourbon cask malt. The strong oaky malt and fresh, floral notes work together.
